To set the language for your book, go here:

...making sure to replace YOUR_BOOK with your book's unique web address.

You can also find the "Language" page on your book's "Overview" page, under "Settings":

Select your language by clicking on the dropdown menu:

Some languages also have a specific locale you can choose:

After you have selected your language, click "Update Book":

When you select a language for your book, this may change the language displayed on the book's web page on Leanpub. Here's an example from a book with the language set to Japanese:
